Recipe for the Spiezer wine soup
No, the Riesling-Silvaner soup from Spiez is not an ordinary soup! It's more like a royal soup, made with leek, celery, butter and cream - and of course with the best Riesling-Silvaner from the Spiez vineyard.
Ingredients (starter for 2 people)
3 tbsp olive oil
30 g butter
60 g onions
60 g celeriac
60 g leek 1.2 dl stock
2 dl Spiezer Riesling-Silvaner
3 dl cream
Salt, pepper, nutmeg
2 handfuls of bread cubes
1 tablespoon chive rings
Preparation
Heat the olive oil and butter and add the vegetable pieces. Sauté the vegetables for a few minutes, dust with flour and deglaze with the stock. Simmer for about 20 minutes until the vegetables are soft. Puree the vegetables and then pass them through a sieve. Then add the Riesling-Silvaner and continue to simmer briefly. Season the soup with salt, pepper and nutmeg. Finally, add the cream and leave to boil.
In another pan, toast some bread cubes in hot butter with a little salt until golden brown. Serve the soup with the bread croutons or a dollop of whipped cream and chive rings.
